Crunchy green apples are in abundance here at the moment, and we are loving them cooked with cinnamon or berries, and topped with yoghurt & granola. They are also pretty good in this baked loaf which is gluten free and sweetened only with dates. Best served warm from the oven!
Serves: 6-8 People
Makes: 1 Loaf
We use all organic or biodynamic ingredients.
- 2 large green apples, diced and cooked in a little water
- 6 medjool dates, seeds removed, soaked in boiling water for 10 – 15 minutes
- 1 1/2 cups almond meal
- 1 cup cassava flour
- 1 tsp bicarb soda
- 2 tsp cinnamon powder
- 1/3 cup activated walnuts, roughly chopped. Extra 6-8 walnuts to top
- 2 free range, organic eggs, whisked together
- 2 tbsp macadamia nut oil (alternatively you can use avocado oil or melted grass fed butter)
- 1 tsp vanilla extract
METHOD
- Preheat oven to 180°C fan forced.
- Line a loaf pan with parchment paper
- In a bowl, mix together almond meal, cassava flour, bicarb soda, cinnamon & walnuts.
- In another bowl whisk together cooled apple, eggs ,oil/ melted butter & vanilla until well combined..
- Add wet ingredients to dry ingredients and mix together well.
- Pour mix into loaf pan.
- Top with walnuts & a dusting of cinnamon.
- Bake in oven for approx. 30-40 mins until golden on top and cooked through.
SERVE
Allow to cool a little then slice & serve warm spread with macadamia nut butter.
