Who needs artificial colours & flavours when nature provides some of the most beautiful, vibrant hues from tropical fruits like the Dragonfruit (also known as Pitaya) . Rich in iron, magnesium, vitamin C, fibre and a host of antioxidants (particularly the red variety) these delicious fruits are abundant in the northern rivers right now.
They are delicious simply freshly cut with a squeeze of lime, but if you want to get fancy, try these easy raw bites.
Preparation Time: 30 mins
Makes: 20 Balls
We use all organic or biodynamic ingredients.
BALLS
- 1 ½ cups almonds (raw or activated)
- 1 cup dessicated or shredded coconut
- 1 cup coconut butter
- 6 dates, pitted
- 1 fresh dragonfruit, peeled and chopped
- ½ tsp high quality salt
- 1 tsp vanilla extract or powder
CHOCOLATE COATING
- 1 cup cacao butter
- 1 tbsp cacao powder
- 1/2 -1 tbsp raw honey or maple syrup
METHOD
- Place all the ball ingredients in food processor and blend, scraping down regularly until well combined.
- Wet hands and roll mix into walnut sized balls. Place in freezer while making the chocolate.
- Melt cacao butter, cacao, and honey/maple in pan over low heat, stirring regularly until melted but still thick. Pour into a jug.
- Remove balls from the freezer and drizzle with chocolate. Place back in freezer to set.
SERVE
Remove from freezer and let sit for 5-10 minutes, then enjoy as an anytime, anywhere snack!
