We had a long season of sweet, organic cherries this summer, however they all got eaten so quickly I didn’t get time to make these raw ‘cherry ripe’ balls that I’ve been planning for some time.
Fortunately I found some organic, frozen, sweet cherries that are readily available so I used these to make this cherry coconut bliss ball recipe for our Easter family feasting this year.

Makes: Approx. 20 balls
We use all organic or biodynamic ingredients.
BALLS
- 1 ½ cups almonds (raw or activated)
- 2 ½ cups shredded coconut + 1 additional 1 cup to roll balls in
- ¼ cup coconut oil
- 6 dates, pitted
- 1 cup pitted cherries (fresh or frozen)
- ½ tsp high quality salt
- 1 tsp vanilla extract or powder
CHOCOLATE COATING
- 1 cup cacao butter
- 2 tbsp cacao powder
- 1 tbsp raw honey or maple syrup
METHOD
- Place all the ball ingredients in food processor and blend, scraping down regularly until well combined.
- Wet hands and roll mix into walnut sized balls. Place in freezer while making the chocolate coating.
- Melt cacao butter, cacao, and honey/maple in pan over low heat, stirring regularly until melted but still thick. Pour into large cup or small deep bowl.
- Using a skewer in the bottom, dip each ball into the chocolate mix until coated. Place back in freezer to set.
- You can repeat this until each ball is thickly coated.
- Sprinkle balls with shredded coconut.
- Place balls on a tray, cover and put in freezer for at least 2 – 3 hours.
SERVE
Remove from freezer and let sit for 5-10 minutes, then enjoy as an anytime, anywhere snack!
