We get delicious organic macadamia butter from a local farmer and use it for many sweet and savoury recipes … however this is up with one of our favourite decadent treats! Very simple to make, they keep well (if you hide them in an airtight container - they are usually eaten on the same day in our house) and you could substitute cashew or almond butter if you can’t get organic macadamia nut butter. We love these biscuits because they are a little bit chewy, a little bit gooey, very chocolatey and very delicious!
Makes: 12 Biscuits
We use all organic or biodynamic ingredients.
- 1 cup macadamia nut butter
- ¾ cup coconut sugar
- ½ cup almond flour or meal
- 1 tsp baking soda
- ½ tsp high quality salt and 1 tsp for top of cookies
- 5 tablespoons cacao powder
- 1 tbsp avocado, olive or macadamia nut oil
- 2 large eggs
- 2 tsp vanilla powder or extract
- Dark, raw chocolate squares or drops to top cookies (we used Loco Love dark chocolate drops)
METHOD
Preheat oven to 180°C. Line a baking tray with parchment paper.
Mix all ingredients together in large bowl to form a thick dough.
Wet hands and roll dough into 12 equal sized balls.
Press down with your thumb to form a hole in the top of each ball and fill with dark chocolate chips or square.
Bake for 10 minutes.
SERVE
Remove from oven and allow to cool a little. Sprinkle with salt and enjoy warm.
Serve with tea or milk (try not to spill the milk, like we did in our shoot!)
